Method
Toss cucumber with salt and let stand for 15 minutes. Rinse under cold water; pat dry. Cut cheese and salami into similar-sized sticks. Set aside.Meanwhile, in large pot of boiling salted water, cook cauliflower until tender-crisp, about 4 minutes. Drain and chill under cold water; drain well.
Mustard Dressing: In small bowl, whisk together mustard, mayonnaise, oil, pickled onion liquid, vinegar, paprika, pepper and salt.
In large bowl, toss together cauliflower, cucumber, watercress, red pepper and dressing; divide among plates. Arrange cheese, salami, eggs and pickled onions over top.
