Chicken Salad with Grapes & Cashews

Method

In large skillet, heat oil over medium heat. Add chicken and paprika. Season with salt and pepper. Cook, stirring occasionally, until chicken is no longer pink, 6 to 8 minutes. Remove skillet from heat; let cool.

In large bowl, combine lettuce, grapes, cucumbers, cashews and chicken. Drizzle with Curry Vinaigrette; toss to coat well.

Curry Vinaigrette

In small bowl, combine 1/3 cup sunflower oil, 3 tbsp cider vinegar, 2 tsp curry powder, 1 tsp old-fashioned mustard and 1 clove garlic, finely chopped. Season with salt and pepper. (Make-ahead: Can be covered and refrigerated for up to 5 days.)

Makes about 1/2 cup.
