Cola- & Paprika-Marinated Chicken Kabobs

In shallow dish, combine cola, paprika, oil, oregano, cumin and garlic, and hot pepper sauce, if using. Add chicken and toss to coat well. Cover and refrigerate for 2 hours or overnight. (Make-ahead: Can be stored in airtight container and frozen for up to 3 months.) 

Preheat barbecue to medium heat (about 350°F); grease grill. On metal or soaked wooden skewers, thread chicken cubes, about 1/4-inch apart. Season with salt and pepper. Reserve marinade. 

Place skewers on grill. Close lid and cook, turning skewers 3 times during grilling time, until chicken is no longer pink inside, 15 to 20 minutes.

Meanwhile, pour reserved marinade into small saucepan and bring to boil. Simmer until slightly thickened, about 3 minutes. Just before serving, sprinkle skewers with cilantro, if using. Serve with cooked marinade, and lime wedges, if using.
