A simple cold pasta salad makes a great lunch or light dinner. Pair with grilled chicken or fish, like our Miso Salmon, for an easy summer meal.

Method

In saucepan of boiling water, cook soba noodles according to package directions. Drain and rinse under cold water; drain well.

In large bowl, whisk together sesame oil, vinegar, soy sauce, oil, salt and pepper. Add noodles, red pepper and green onion; toss to coat.
