These quick-and-easy hand-held quesadillas are inspired by anyone's favourite pizzeria. They are great served as an appetizer or as a main dish alongside a tossed salad. Try serving them with marinara sauce. Your can substitute your choice of sliced deli meat for the pepperoni.

Method

Sprinkle one-quarter of the mozzarella cheese on half of one tortilla. Top with 1/4 each of the basil, red pepper, green onion and pepperoni. Top with another quarter of the cheese; fold in half. Repeat with remaining tortilla.

In large nonstick skillet, toast tortillas on both sides until crisp, about 2 minutes per side. Cut each into 3 triangles.
