Method
In food processor or blender, purée cottage cheese until smooth. Set aside in refrigerator.
In large skillet, heat ghee over medium heat. Add onion and cook, stirring often, for 3 minutes. Add cumin, garam masala, turmeric, coriander and cardamom; cook, stirring constantly, for 1 minute. Add garlic and ginger; cook, stirring often, for 2 minutes. Add chicken and cook, stirring occasionally, until almost cooked through, 4 to 5 minutes. Stir in tomato sauce; season with salt and pepper. Reduce heat to medium-low; simmer, stirring occasionally, until chicken is fully cooked, 7 to 8 minutes. Stir in reserved cottage cheese, reduce heat to low and cook until warmed through, 2 to 3 minutes. Sprinkle with cilantro and serve with naan, if using.
TEST KITCHEN TIP
Ghee is traditionally used in Indian cooking because it does not burn. If you don’t have ghee on hand, you can also use 5 tbsp regular butter plus 1 tbsp vegetable oil to produce the same high smoke-point effect.
