This is a rustic side dish. Notes of lemon and basil add tartness, which pairs well with the rich pot roast.

Method

In large saucepan of boiling salted water, cover and cook potatoes until fork-tender, 12 to 15 minutes. Drain; return potatoes to pan. Using potato masher, coarsely mash potatoes. 

Add milk, basil, oil, lemon zest, salt and pepper; mash to desired consistency. Serve warm.
