Method
In saucepan of boiling salted water, cook couscous for 8 minutes. Drain, rinse with cold water, and drain again. Set aside.
Meanwhile, in small bowl, whisk together oil, vinegar, lemon juice and garlic. Season with salt and pepper; set aside.
On large serving platter, toss couscous with radicchio, mixed greens and tomatoes. Drizzle with reserved vinaigrette. Sprinkle with Parmesan shavings and microgreens, if using.
