Method
In large, deep skillet, heat 1 tbsp of the oil over medium-high heat. Add chicken and cook, turning halfway through cooking time, until browned, about 4 minutes. Transfer to plate; keep warm.
In same skillet, heat remaining oil and the butter over medium heat. Add onion and garlic and cook, stirring often, for 2 minutes. Add frozen mixed vegetables and thyme. Cook, stirring occasionally, for 3 minutes. Sprinkle in the flour; stir and cook for 1 minute. Stir in chicken broth, milk, bouillon powder and reserved chicken. Reduce heat to low and simmer for 10 minutes. Season with salt and pepper.
Sprinkle with chopped fresh thyme and serve with crusty bread, if using.
