Method
In saucepan of boiling salted water, cook gnocchi according to package directions. Reserving 1 cup of cooking water, drain pasta and set aside.
In large skillet, heat oil over medium heat. Add onions and garlic; cook, stirring often, for 2 minutes. Stir in cream and pesto. Bring to boil; cook until cream is slightly reduced, about 3 minutes. Add reserved gnocchi and the spinach. Mix gently, adding some of the reserved pasta water if necessary. Cook for 1 minute. Remove from heat; stir in cranberries and Brie. Sprinkle with Parmesan, if using, and black pepper, if desired.
