Thin pork chops topped with a crispy cheese mix are irresistible. Canadian Mushroom Oka cheese gives another layer of flavour but you also could use plain Canadian Oka Classic, an aged Canadian Gouda or old Canadian Cheddar cheese. Or try another flavoured cheese, such as Canadian cumin-flecked Gouda or Canadian Pepper Jack.

In ovenproof skillet, cook bacon over medium heat until crisp, about 8 minutes; remove pan from heat. With tongs, remove bacon; let cool and chop. Drain all but 1 tbsp fat from skillet.In bowl, combine bacon, bread crumbs, cheese, onions, sage and half of the pepper; set aside.
Reheat skillet over medium heat; fry garlic until golden, about 2 minutes. With tongs or slotted spoon, discard garlic.
Sprinkle both sides of chops with salt and remaining pepper. Add to skillet and cook over high heat until bottom is browned, about 2 minutes. Remove skillet from heat; flip chops and top with bread crumb mixture. Bake in 400°F (200°C) oven until topping is crisp, 18 to 20 minutes.
