Cubano-Style Grilled Pork Sandwich

Method

In small bowl, combine oil, lime juice, cumin and garlic. Brush pork cutlets with lime mixture; season with salt and pepper. 

Preheat barbecue to medium-high heat (about 375°F); grease grill. Place pork on grill and cook, turning halfway through grilling time, until golden outside and still slight pink inside, 3 to 4 minutes. 

Spread mustard inside buns and top with grilled pork cutlet (cut, if necessary), ham, pickle slices and cheese. Place sandwiches on grill, close lid and cook, turning halfway through grilling time, until bread is marked and cheese is melted, 6 to 8 minutes. Slice sandwiches in half diagonally and serve with additional mustard.

This recipe is inspired by the cubano, a roast pork, ham and cheese sandwich popularized by Cuban immigrants to the United States who settled in Florida. Traditionally, the meat is marinated in mojo sauce, a mixture of orange and lime juices, garlic and cumin.
