Method
Fill saucepan with enough cold, salted water to submerge potatoes. Bring to boil and cook for 7 minutes.
Preheat oven to 450°F. Line baking sheet with parchment paper; set aside. Drain potatoes and spread out on clean tea towel; let dry for 5 minutes.
In bowl, combine potatoes, oil, garlic, thyme and rosemary. Season with salt and pepper; toss to coat.
Transfer potatoes to reserved baking sheet. Bake, stirring half- way through baking time, about 10 minutes. Add duck fat and stir to coat potatoes. Place under broiler until potatoes are lightly browned. Sprinkle with thyme and rosemary, if desired.
