Easter Maple-Glazed Ham

Method

Using sharp knife, remove outer skin from ham. Trim layer of fat to 1⁄4-inch thickness. Using paring knife, diagonally score remaining fat to make square or diamond pattern on ham. Place ham in baking dish; set aside.

Preheat oven to 350°F. In saucepan, bring maple syrup to boil. Reduce heat and simmer until slightly reduced, about 5 minutes. Stir in apple juice, broth, garlic and clove; pour over ham in baking dish.

Cover and bake for 2 hours. Uncover; cook, basting often with cooking liquid, until instant-read thermometer inserted in centre reads 140°F, about 1 hour.

Transfer ham to cutting board; cover lightly with foil. Let stand for 20 minutes. Meanwhile, bring cooking liquid to boil; reduce heat and simmer for 10 minutes. Slice ham; serve with sauce.
