In large skillet or wok, heat 1 tbsp of oil over medium-high heat; cook pork, stirring often, until golden, 4 to 5 minutes. Transfer to plate; set aside.

In same skillet, heat remaining oil over medium heat; cook shallots, garlic and ginger, stirring, until softened, about 2 minutes. Stir in 2⁄3 cup water, sugar, fish sauce and soy sauce; bring to boil over medium-high heat. Reduce heat; simmer, stirring often, until slightly thickened, about 2 minutes. Return reserved pork to pan; cook, stirring occasionally, until sauce is thickened and pork is well coated, about 5 minutes. Sprinkle sesame seeds over top. Season with salt and pepper.
