Preheat oven to 450°F. Line large baking sheet with parchment paper; set aside. In skillet, heat butter over medium heat. Add garlic and leek; cook, stirring often, for 2 minutes. Add peas; cook, stirring often, for 1 minute. Season with salt and pepper; remove from heat and set aside.
Place puff pastry sheets on prepared baking sheet. Prick all over with fork. Using spoon, spread goat cheese evenly over pastries; sprinkle with herbs. Divide leek mixture between pastries, spooning over top. Top each with prosciutto. Fold edges of pastries inward to form crust; brush crusts with egg.
Bake on upper rack of oven until crusts are starting to brown, about 15 minutes. Slice galettes into 2 or 4 pieces. Serve with greens, if desired.
