Method

In bowl, stir together goat cheese, green onions, basil, parsley, olive oil, lemon zest, lemon juice, pepper and salt until smooth.

Spread butter evenly over 5 of the bread slices. Divide goat cheese mixture among remaining bread slices, spreading evenly; layer with spinach and alfalfa sprouts, then fan avocado slices over top. Top each with a buttered bread slice, pressing lightly. With serrated knife, cut each sandwich into quarters.
