GRILLED ALL-DRESSED PIZZA

Method

Pizza Dough In large bowl, stir together water, yeast and sugar; let stand until foamy, about 10 minutes. Using wooden spoon, stir in olive oil, flour and salt until dough forms, 2 to 3 minutes. Transfer dough to floured work surface and knead until smooth and not very sticky, 5 to 7 minutes. (You can also prepare dough in stand mixer fitted with hook attachment, on medium speed, for about 3 to 4 minutes.) Transfer dough to large greased bowl; cover with clean tea towel and let rise until dough has doubled in size, about 1 to 1 1/2 hours. (Make ahead: Can be refrigerated for up to 3 days. Let stand at room temperature for 30 minutes before using.)

 

Base Preheat barbecue to high heat (about 400°F or higher), lighting only one or two burners (in preparation for cooking over indirect heat); grease grill.

On floured thin cutting board or rimless baking sheet, stretch dough into 12- to 14-inch circle. Gently slide dough directly onto grill over lit burners; close lid. Cook for 2 minutes. Using barbecue tongs, lift crust and check if it’s toasted underneath; rotate crust 180° and grill for 1 to 2 minutes, if necessary.

Using barbecue tongs, slide crust back onto cutting board, toasted side down. Brush with olive oil; turn crust over so toasted side is up. Spread with pizza sauce and sprinkle with mozzarella and provolone; add Toppings of your choice.

Slide pizza directly onto grill over lit burners; close lid. Grill until bottom of pizza is toasted, 2 to 3 minutes. Using tongs, slide pizza onto grill over unlit burners; close lid. Grill, rotating pizza 180° halfway through grilling time, until cheese is melted and toppings are hot, about 5 minutes. Slide pizza onto cutting board and top with basil leaves and hot pepper flakes, and drizzle with olive oil, if using.
