Grilled Chicken with Watermelon Salsa

In large bowl, gently combine watermelon, cucumber, cilantro, onion, jalapeño pepper, honey and lime zest and juice. Season with salt and pepper; set aside.

Preheat barbecue to medium heat (about 350°F); grease grill. Brush chicken breasts with oil; season with salt and pepper. Place chicken on grill and close lid. Grill until marked and no longer pink inside, turning halfway through grilling time, about 10 minutes. Transfer chicken breasts to serving plate and top with watermelon salsa.
