Grilled Lobster with Parmesan Pangrattato

Method

In small bowl, combine 1 clove garlic, oil and Old Bay-Style Spice Mix. Brush over cut side of lobsters’ set aside. In separate small bowl, combine remaining garlic, bread crumbs, Parmesan, butter and parsley; set aside.

Preheat grill to medium heat; grease grate well. Grill lobsters, cut side down, until grill-marked, 2 to 3 minutes. Turn lobsters; sprinkle with bread crumb mixture. Close lid and cook until topping is golden brown, 3 to 5 minutes.

Old Bay-Style Spice Mix

Makes about 1/4 cup.

In small bowl, mix together 1 tbsp ground bay leaf, 2 tsp celery salt, 1 1⁄2 tsp each dry mustard and pepper, 3⁄4 tsp nutmeg, 1⁄2 tsp each ground ginger, paprika and cayenne pepper, 1⁄4 tsp ground cardamom and 1⁄8 tsp ground cloves; transfer to small airtight jar. (Make-ahead: Can be stored at room temperature for up to 2 months.)
