Meaty, dense portobello mushrooms are a delicious substitute for hamburgers – even for meat lovers. Mushrooms are like sponges because they absorb water, which is why cleaning them with a damp paper towel is all that's necessary.

Ingredients

Method

Remove stems and gills from mushrooms; wipe caps clean. Brush mushrooms and onion with oil; sprinkle with salt and pepper.

Place mushrooms and onion on greased grill over medium-high heat; close lid and grill, turning once, until tender and grill-marked, about 10 minutes. Remove onions to plate.

Add 1 slice provolone to each mushroom cap; grill, covered, just until cheese is melted, 2 minutes.

Meanwhile, spread cut sides of buns with red pepper spread. Sandwich lettuce, tomato, mushroom, onion and basil in each bun.
