Method

Rinse haddock fillets; pat dry with paper towel. Place flour in shallow dish; dredge fish in flour, turning to coat and shaking lightly to remove excess. Season with salt and pepper.

In large skillet, melt 1 tbsp butter over medium-high heat; cook fish, gently turning halfway through, until golden and fish flakes easily when tested, about 4 minutes. Transfer to serving plate; keep warm.

In same pan, melt remaining butter over medium heat; cook until foamy, about 2 minutes Add lemon juice; cook, stirring, for 1 minute. Season with salt and pepper. Pour over reserved fish; sprinkle with parsley.

Test Kitchen Tip: Steamed baby potatoes are the perfect pairing for this delicious fish.
