Homemade Herbes Salées

Herbes Salées is a traditional French Canadian condiment. It is easy to make, very flavourful and keeps for several months. Add a spoonful or two to any savoury dish instead of salt.

Method

In food processor, add parsley; pulse until finely chopped. Transfer to large bowl. Repeat with carrots, celery, leek and fresh herbs, pulsing each ingredient separately, until finely chopped, and all ingredients are transferred to large bowl. Stir to combine.

Stir in coarse salt. Transfer to clean 1-cup glass jar, firmly pressing mixture down. (Make-ahead: Can be refrigerated for up to 6 months.) Makes 1 cup.
