Sweet, salty and fall-off-the-bone tender, these barbecued ribs are simply perfect.

Method
Preheat barbecue to medium heat (about 350°F), lighting only one or two of the burners (in preparation for cooking over indirect heat); grease grill.
Ribs Place ribs on cutting board, bone side up; with knife, loosen and peel off tough membrane. In bowl, combine brown sugar, paprika, garlic, onion and chili powders, cumin, chipotle powder, hot pepper flakes and salt. Season with pepper and stir with fork to combine. Using your hands, rub spice mixture all over ribs.
Place ribs on grill, bone side down, over unlit burners. Close lid and cook for 45 minutes. Rotate ribs 180°; close lid and cook for 45 minutes. During last 20 minutes of grilling time, place corncobs on grill over lit burners; close lid and cook, turning every 5 minutes, until corn is tender and grill-marked. Set corn aside to cool.
Remove ribs from grill. Carefully wrap ribs in foil and return to grill over unlit burners. Close lid and cook until ribs are tender and juicy, about 30 minutes.
Honey Glaze Meanwhile, whisk together honey, olive oil, lime juice, ketchup, cider vinegar and liquid smoke. Season with salt and pepper; set aside.
Corn-Avocado Salsa On large cutting board, one by one, hold corncobs upright, pointy side up, and carefully cut off kernels with sharp knife, keeping knife as close to core as possible. Transfer kernels to bowl. Stir in tomatoes, avocado, onion, cilantro, lime juice, olive oil, honey and tajin seasoning; set aside.
Remove ribs from grill and carefully unwrap. Brush with about one-third of the reserved Honey Glaze. Return to grill, meat side down, over lit burners. Cook, with lid open, for 4 to 5 minutes. Flip ribs; brush with half of the remaining Honey Glaze. Grill until glaze is caramelized, 4 to 5 minutes. Remove ribs from grill; tent with foil for about 5 minutes. Slice ribs and serve with Corn-Avocado Salsa and remaining Honey Glaze.
