Kale & Apple Slaw with Chicken

In large skillet, heat olive oil over medium-high heat; cook chicken, turning once, until juices run clear, about 7 minutes. Let cool.


Meanwhile, in jar with lid, combine oil, vinegar, mustard and shallot; season with salt and pepper. Close lid tightly and shake to mix well. (Make-ahead: Can be refrigerated for up 3 days.)

In large bowl, combine kale and Brussels sprouts; toss with 2 tbsp of the dressing. Let stand for 10 minutes. Add chicken, green apple, Cheddar, pumpkin seeds, chives and remaining dressing; toss well to coat.
