Maple-Miso Radishes & White Bean Purée

Method

White Bean Purée In blender, purée beans, garlic, almond butter, lemon zest and juice, 3 tbsp water, and the olive oil until smooth. Season with salt and pepper. Set aside.

Maple-Miso Radishes In bowl, stir miso paste with lukewarm water until miso paste has dissolved. Add to large skillet with lid. Add oil and radishes; partially cover and heat over medium heat until liquid has almost completely evaporated, 5 to 7 minutes. Increase heat to high; cook, stirring constantly, until radishes are browned, 2 to 3 minutes. Sprinkle with hot pepper flakes and cumin; drizzle with maple syrup. Cook, stirring constantly, for 30 seconds; remove from heat.

Spread White Bean Purée over serving plate; top with Maple-Miso Radishes, plus the cooking liquid. Sprinkle with maple flakes, almonds, chives, dill and fleur de sel. Serve with toasted crusty bread.
