Method

Maple Sugar Salmon Place salmon, salt, maple sugar, dill seeds and cayenne pepper in bowl, mixing to coat. Refrigerate for 2 hours, stirring once.

Preheat oven to broil; line baking sheet with foil. Rinse salmon under cold water; pat dry. Place on prepared baking sheet and spray with cooking spray; broil for 6 to 8 minutes.

 

Mustard & Maple Sauce Meanwhile, in bowl, whisk together mustard, vinegar and maple syrup. Add dill and season with salt and cayenne pepper; set aside.

In large saucepan of boiling salted water, cook soba noodles according to package directions. During last minute of cooking, add peas; drain. Divide noodles and peas among plates. Top with salmon and drizzle generously with Maple & Mustard Sauce. Sprinkle with maple flakes and dill, and lemon zest, if using.
