Mini Beef Koftas

In large bowl, combine beef, bread crumbs, onion, 2 tbsp parsley, mint, garlic, egg, cumin, oregano and cayenne pepper. Season with salt and pepper. With wet hands, shape mixture into 8 slightly flattened patties.

In large skillet, heat oil over medium-high heat; cook patties, turning once, for 8 to 10 minutes or until browned and cooked through.

Place each pita on serving plate. Dollop with a few spoonfuls of tzatziki sauce. Arrange patties on top; layer cucumbers and tomatoes over top. Sprinkle with remaining parsley.

Test Kitchen Tip: For a low-carb option, serve the patties on their own with a tomato and cucumber salad on the side.
