Mixed Speducci - An Italian Version of Souvlaki

Speducci is an Italian traditional meal originating from the Aruzzo region of Italy. Traditionally, Speducci is made with lamb meat cut into small chunks and cubed for inserting into wooden skewers. However, you can choose any type of meat (or vegetable) to build your own unique Speducci, just remember to marinate your choice meat and vegetables overnight for best results. 

This would be a great dish to prepare for dad on Father's Day to bring home a taste of Italy and wow him on his special day!
 

Ingredients

Method

Soak the skewers in warm water for at least 10 min or a day before.

In the blender (if you don’t have you can use a mortar and pestle which will be chunkier, or you can even hand chop everything) add in garlic, onion, ½ lemon juice, and olive oil. Blend till smooth. Add to a bowl, then add in rosemary, oregano, chili flakes, fennel seed, lemon zest, 2 tbsp yogurt and whisk well.

Add in the meat and mushrooms to the marinade, keep each on separate. Marinade for at least 3-4 hours ideally overnight.

Place the marinated meat onto the skewers. You should have 4 lamb skewers, 4 chicken and 4 mushroom. We keep them all separate to help with even cooking.

Preheat your grill (ideally cooking over charcoal is best for this). Once the grill is hot, turn down to medium and brush well and rub the grill with an oil rag.

Season the skewers with salt and pepper, then place onto the grill. Cook for approx. 2-3 min per side until nicely grilled and cooked all the way through. If it is grilling too quickly, reduce the heat. Meanwhile, in a bowl, add remaining yogurt, honey, sumac, and milk. Whisk well, season with salt and pepper. Adjust seasoning with some lemon juice if you like.

On a platter, assemble the arugula as a bed. Now arrange the skewers and drizzle with the yogurt sauce. Sprinkle with chopped parsley and a drizzle of olive oil.
