Method

Orange Chicken Skewers In bowl, combine chicken strips, sesame oil and orange zest; season with salt and pepper; mix well to coat chicken. Thread 1 to 2 pieces of chicken onto wooden skewers. Reserve half of the Orange Sauce in bowl for serving (do not contaminate with brush that will touch raw chicken). Brush chicken with some of the remaining Orange Sauce.

Heat large grill pan over high heat. Cook skewered chicken, turning halfway through cooking time and brushing with more Orange Sauce, until chicken is fully cooked and starting to brown, about 6 minutes. Remove from heat; keep warm.

Sautéed Fennel In large skillet, heat oil over medium heat. Add onion; cook, stirring often, for 1 minute. Add fennel, garlic and ginger; cook, stirring occasionally, for 3 to 4 minutes. Remove from heat; stir in honey, orange segments and green onion. Season with salt and pepper, stirring well. Divide Sautéed Fennel among bowls and serve with Orange Chicken Skewers and reserved Orange Sauce. Sprinkle with sesame seeds.

 

Orange Sauce In saucepan, heat 1 tbsp olive oil over medium heat. Add 1 clove garlic, chopped, and 1 tbsp grated fresh ginger. Cook, stirring often, for about 2 minutes. Stir in 1/2 cup orange juice, 1/4 cup water, and 2 tbsp each seasoned rice vinegar and maple syrup. Bring to boil, stirring constantly. Whisk 2 tbsp cornstarch with 2 tbsp water. Whisk into orange juice mixture; cook until thick and smooth, about 2 minutes. Divide sauce in half, reserving one half for serving and one half for brushing chicken. Makes about 1 1/4 cups.
