Orange Tofu Stir-Fry

Season tofu with salt and pepper. In bowl, gently combine tofu with 2 tbsp of the cornstarch; toss to coat well. In large skillet, heat vegetable oil over medium-high heat. Add tofu and cook, stirring occasionally, until browned and crispy, 8 to 10 minutes. Transfer to plate; set aside.

Meanwhile, in small bowl, whisk together orange juice and zest with soy sauce, maple syrup, vinegar and remaining cornstarch. Set aside.

In same skillet, heat sesame oil over medium heat. Add ginger and garlic; cook, stirring constantly, for 1 minute. Pour in reserved orange sauce and bring to boil, stirring often until sauce has thickened. Add reserved tofu; toss to coat well. Sprinkle with green onions and sesame seeds. Serve with rice and bok choy, if desired.
