Pan-Fried Chicken Breasts with Grapefruit-Avocado Salsa

Slice top and bottom off grapefruit; cut down sides to remove peel and pith. Work­ing over bowl, cut between membranes to release segments. Squeeze membranes to release remaining juice. Remove segments from juice; dice and return to bowl. Add avocado, onions, jalapeño, if using, lime juice and honey; toss gently to coat. Season with salt and pepper. Set aside.

Season chicken breasts with salt and pepper, then sprinkle with paprika. In large ridged grill pan, heat oil over medium-high heat. Add chicken breasts and sear well on each side. Reduce heat to medium and cook, turning halfway through cooking time, until chicken is charred and no longer pink inside, 8 to 10 minutes. Top chicken with reserved Grapefruit-Avocado Salsa. Serve with rice and lime wedges.
