Method

In saucepan of boiling salted water, cook green beans until tender-crisp, about 5 minutes. Drain well; set aside.

In large skillet, heat oil over medium-high heat. Add shallots and cook, stirring occasionally, until softened, about 5 minutes. Add reserved green beans and balsamic vinegar; continue cooking, stirring often, for 2 minutes. Remove skillet from heat. Add olives and parsley; mix well. Sprinkle with Garlic & Pepper Croutons before serving.

 

Garlic & Pepper Croutons  Preheat oven to 350°F. In bowl, combine 2 tbsp olive oil, 1 clove garlic, finely chopped, and 1/4 tsp ground black pepper. Add 2 cups 1/2-inch baguette cubes; toss to coat well. Spread bread cubes on baking sheet and bake, turning halfway through, until croutons are golden brown and crisp, 10 to 12 minutes. (Make-ahead: Can be stored in airtight container at room temperature for up to 3 days.) Makes about 2 cups.
