In large bowl, combine oil, thyme, lemon zest and juice, and garlic. Season with pepper. Add shrimp; toss to coat well. Cover and refrigerate for 1 to 4 hours.
Preheat barbecue to medium-high heat (about 375°F); grease grill. Wrap 1 strip pancetta around each marinated shrimp, and thread on metal or soaked wooden skewer.
Place skewers on grill and cook, turning halfway through grilling time, until shrimp are pink and grill-marked, 4 to 6 minutes. Sprinkle with thyme. Garnish with lemon wedges, if using.

For a deluxe version, replace shrimp with large scallops.
