In small saucepan, bring broth to boil. Remove from heat; stir in couscous. Cover and let stand for 5 minutes.
Meanwhile, in small skillet, heat oil over medium heat. Add shallot and cook, stirring occasionally, for 1 minute. Add garlic and cook, stirring constantly, for 1 minute. Add peas, cumin and curry powder and cook, stirring often, until peas are cooked through, about 3 minutes. Remove from heat and scrape into saucepan with couscous. Fluff with fork, season with salt and pepper and stir gently. Sprinkle with fresh mint and microgreens, if using.
