Method
Pistachio-Crusted Cod Preheat oven to 450°F; line baking sheet with foil. Place fish on baking sheet and brush with pesto. Top fish with pistachios, pressing lightly to adhere. Season with salt and pepper. Bake until fish is opaque and flakes easily when tested with fork, 12 to 15 minutes.
Avocado Cream Meanwhile, in blender, add pesto, olive oil, lime juice, 2 tbsp water, maple syrup and avocado; blend until smooth. Season with salt and pepper. Serve with Pistachio- Crusted Cod, lime wedges, basil, and couscous, if using.
