PIZZA-STYLE STUFFED PORTOBELLO MUSHROOMS

Method

Preheat oven to 400°F. Place mushrooms bottom sides up on parchment paper-lined baking sheet. Spread 1 tbsp pesto over each mushroom; season with pepper. Divide cheese, green pepper, pepperoni and olives evenly among mushrooms. Sprinkle with hot pepper flakes, if desired.

Bake until mushrooms are tender and cheese is melted, about 20 minutes. Sprinkle with oregano, if desired.
