Method
In large skillet, heat 2 tbsp of the oil over high heat. Add chicken and cook, turning halfway through cooking time, until browned on both sides, 6 to 8 minutes. Season with salt and pepper. Transfer to plate; set aside.
In same skillet, heat remaining oil. Add shallot and garlic; cook, stirring often, for 1 to 2 minutes. Stir in pomegranate molasses, honey and broth; cook, until slightly reduced, about 2 minutes. Add reserved chicken and cook, stirring to coat chicken in sauce, for 2 minutes.
Serve chicken over egg noodles, sprinkled with parsley and pomegranate arils, if using. Serve with green salad, if desired.
