In ovenproof skillet, melt butter over medium-high heat. Add onions; season with salt and pepper. Cook, stirring often, until onions are soft, about 5 minutes. Reduce heat to medium. Add maple syrup and thyme; continue cooking, stirring occasionally, until onions are tender and golden, about 10 minutes.

Meanwhile, season pork chops with salt and pepper. In separate skillet, heat oil over medium heat. Add pork chops and cook until still slightly pink inside, turning halfway through cooking time, about 5 minutes. Remove skillet from heat.

Pour broth over onion mixture; stir in cornstarch. Bring to boil; cook until mixture has thickened.

Preheat oven to broil. Transfer pork chops to skillet with onion mixture. Cover each chop with a slice of Swiss cheese and spoonful of onions. Broil until cheese is melted, 1 to 2 minutes.
