Raclette Nachos

Method

In skillet, heat oil over medium heat. Add onion and cook, stirring often,
for 3 to 4 minutes. Add beef and cook, breaking up meat with wooden spoon until no longer pink, about 5 minutes. Drain off some fat, if desired. Add mush­ rooms; cook, stirring occasionally, for 5 minutes. Stir in soy sauce and Montreal Steak Spice; cook for 1 minute. Remove from heat and set aside.

Preheat oven to broil. On large baking sheet, spread half of the tortilla chips. Top with half of the beef mixture and half of the cheese. Repeat with remain­ ing chips, beef mixture and cheese.

Broil until cheese has melted and is starting to brown, 4 to 5 minutes.Sprinkle with chopped flat-­leaf pars­ley and serve with spicy mayonnaise, if using.
