Roast Pork with Fennel & Apples

Marinade
In bowl, stir together all ingredients. Rub over pork; cover and refrigerate for at least 1 hour or up to 4 hours.

Roast
Preheat oven to 450°F. In large ovenproof skillet, heat butter over medium heat until melted; add onion, fennel and garlic. Cook, stirring often, until starting to brown, about 5 min­ utes. Place pork on top of vege­ tables; transfer to oven. Cook for 10 minutes. Reduce temperature to 350°F; cook for 30 minutes.

Add white wine to skillet; cook for 25 minutes. Transfer pork to plate; loosely tent with foil.

Add apples, apple juice, maple syrup, fresh thyme and cider vine­ gar to skillet. Cook over medium heat, stirring often, until liquid has almost completely evaporated, about 5 minutes. Slice pork; serve over fennel and apple mixture.
