Marinade
In bowl, stir together all ingredients. Rub over pork; cover and refrigerate for at least 1 hour or up to 4 hours.
Roast
Preheat oven to 450°F. In large ovenproof skillet, heat butter over medium heat until melted; add onion, fennel and garlic. Cook, stirring often, until starting to brown, about 5 min utes. Place pork on top of vege tables; transfer to oven. Cook for 10 minutes. Reduce temperature to 350°F; cook for 30 minutes.
Add white wine to skillet; cook for 25 minutes. Transfer pork to plate; loosely tent with foil.
Add apples, apple juice, maple syrup, fresh thyme and cider vine gar to skillet. Cook over medium heat, stirring often, until liquid has almost completely evaporated, about 5 minutes. Slice pork; serve over fennel and apple mixture.
