Method

Preheat oven to 450°F. Line baking sheet with foil. In large bowl, combine Brussels sprouts, Parmesan, oil, pepper and garlic. Season with salt. Place Brussels sprouts on prepared baking sheet, cut side down. Bake, stirring twice during baking time, until Brussels sprouts are roasted and starting to brown, 12 to 15 minutes.

Transfer roasted Brussels sprouts to serving dish. Sprinkle with Parmesan shavings, if desired.
