In large saucepan of salted boiling water, cook beans until tender-crisp, about 2 minutes. Transfer to large bowl of cold water; drain and set aside.

In large skillet, heat oil over medium-high heat. Add ginger and cook, about 1 minute. Add beans and continue cooking, stirring, about 2 minutes. Season with salt and pepper. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days.)
