SAUTÉED SHRIMP, DRAGON FRUIT & ASIAN PEAR SALAD

Method

In food processor, purée half of the pear slices, the garlic, ginger, soy sauce, vinegar, sesame oil and maple syrup until smooth. Transfer mixture to small bowl. Stir in sesame seeds and pepper. Transfer 1/4 cup of sauce to separate bowl; stir in shrimp. Cover and refrigerate for 10 minutes. Meanwhile, stir 2 tbsp olive oil into remaining sauce. Set aside.

In large skillet or wok, heat remaining olive oil over medium-high heat. Add shrimp and marinade; cook, turning once, until shrimp are pink and opaque throughout, about 4 minutes.

In large bowl, add mixed greens, cucumbers, carrots, dragon fruit, snow peas, mint leaves and remaining pear slices. Top with sautéed shrimp. Serve with reserved sauce.
