Method

In large saucepan, heat oil and butter over medium-high heat. Add cod pieces and cook until bottoms are brown, about 5 minutes. Flip cod and cook until brown and fish flakes easily with a fork, about 5 minutes. Transfer fish to plate, cover with aluminum foil; set aside. Add shallots and pepper to saucepan; cook, stirring occasionally, 3 minutes. Add garlic and cook, stirring, for 1 minute. Gently stir in saffron, salt and pepper; add white wine and simmer, gently scraping bottom of pan until sauce has reduced, 3 to 4 minutes. Divide cod among shallow bowls, drizzle with sauce and serve garnished with chives (if using).
