Shrimp & Zucchini Crostini

Crostini is a classic Italian appetizer made extra fresh with bright shrimp and zucchini.

Method

Line baking sheet with parchment paper. Rub one side of each bread slice with one of the garlic cloves; brush bread slices with 1 tbsp of the oil. Place bread on prepared baking sheet. Mince both garlic cloves.

Preheat broiler. In skillet, heat remaining oil over medium heat. Add garlic and cook for 15 seconds. Add shrimp and zucchini; cook, stirring often, for 2 minutes. Add pesto and lemon juice; cook, stirring often, for 1 more minute. Season with salt and pepper; set aside.

Meanwhile, broil bread slices until golden brown, 2 to 3 minutes. Top each slice with shrimp and zucchini mixture and sprinkle with parsley, if using.
