Method

Smoky Tofu
Preheat oven to 400°F; line baking sheet with parchment paper. Set aside.

In large bowl, whisk together oil, tomato paste, soy sauce, liquid smoke, chili powder, paprika and chipotle powder. Season with salt and pepper. Place about one-quarter of marinade in small bowl; set aside. Add crum- bled tofu to marinade in large bowl and toss well to coat.

Spread tofu on prepared baking sheet; bake on top rack of oven until slightly crispy, 15 to 20 minutes. Pour reserved marinade over hot tofu and toss well.

Assembly
Stuff taco shells with Smoky Tofu, pico de gallo, guacamole, refried beans and shredded lettuce.
