Sweet & Sour Pork & Pineapple Skewers

Preheat barbecue to medium-high heat (about 375°F); grease grill. Soak 4 wooden skewers in large bowl of water for 5 to 10 minutes. In large bowl, combine honey, soy sauce, ginger, oil and garlic. Transfer half of the marinade to small saucepan; set aside. Place pork cubes in remaining marinade and let stand for a few minutes. Meanwhile, bring saucepan of reserved marinade to boil over medium-high heat. In cup, whisk cornstarch with 1 tbsp water until dissolved; whisk into saucepan. Whisk until sauce thickens, 1 to 2 minutes. Set aside. Thread pork onto prepared skewers, alternating with pineapple and onion. Place skewers on grill; cook, turning halfway through grilling time and brushing with reserved sauce every 2 minutes, until pork is cooked through and lightly charred, about 6 minutes. Serve with salad greens and pineapple cubes, and cilantro, if using.
