The fresh flavours of tropical fruits mingle happily with more typical salad ingredients to add Asian flair to this summery salad.

Method

In small bowl, stir together lime juice, Thai chilies, cilantro, shallot, garlic, fish sauce and sugar until combined.

In large bowl, toss together shallots, pomelo, long beans, carrots, mint leaves, cashews and Thai Dipping Sauce until combined. Let stand for 5 minutes. Add mangos and toss just before serving.
