Method

In blender, purée green pepper, mint, cilantro, garlic and lime juice until smooth. Season with salt and pepper. Set aside. (Make-ahead: Can be stored in airtight container and refrigerated for up to 2 days.) 

Arrange tomatoes on serving dish. Drizzle with Curry Vinaigrette and half of the reserved herb purée. Sprinkle with crispy fried onions. Serve with remaining herb purée.
